Mr. Cardoz tested positive for Covid-19 on March 18 and was being treated for it at Mountainside Medical Center in New Jersey.
Floyd Cardoz was born in what was then Bombay, India, and grew up between the city and his native Goa. Originally wanting to be a biochemist, he took up cuisine against the wishes of his father. Mr. Cardoz then went to the renowned Les Roches culinary school in Switzerland, before heading for New York City. He opened the pioneering modern Indian restaurant Tabla with well-known restaurateur Danny Meyer in 1998, to much critical acclaim.
Floyd Cardoz grew to be an influential chef that successfully infused regional Indian cuisine with French and American flavors. He opened a string of acclaimed restaurants in both New York and Mumbai, the famed Bombay Canteen, among them. He also became a TV star along the way, having competed and won on Top Chef Masters.
Mr. Cardoz admitted himself to the hospital on March 17 after feeling feverish.He had recently returned from India, where he was filming a show with Aziz Ansari. He was 59.
